Two of my favorite Starbucks drinks-white chocolate mocha and peppermint mocha are turned into a cookie! White Chocolate Peppermint Mocha cookies are made with ground coffee and peppermint chips.
I’m not a regular drinker of Starbucks coffee but if I happen to have a coffee craving, the white chocolate mocha with a double shot is my go to beverage. If it’s winter, I’ll indulge in the peppermint mocha. For cookie week, I’ve taken my two favorite Starbucks coffee drinks and turned them into these delicious white chocolate and peppermint mocha cookies.
Earlier in the fall, I bought a bag of green mint chips. I had no idea what I was going to do with them, but that shiny green bag was staring right at me. I just had to buy them. Hey, tis the season, right?
My first thought was to do something with chocolate. Deep chocolate paired with mint, like in these snowflake cookies, is such a classic winter flavor.
Of course, I love anything mocha too! This would not be the first time I’ve taken a coffee drink and turned it into dessert. Have you seen these vanilla bean latte cupcakes?
Anyways, my plan to use mint chips in a cookie eventually evolved into this awesome combination. (I also happen to have a bag of white chocolate chips!) The last time I baked cookies, I made super rich chocolate peanut butter cookies. They were so cakey and I loved them!
This recipe also produces a nice fluffy cakey cookie. I’m totally into this cakey cookie texture.
Ok, lets talk about the coffee. These cookies are made with coffee grounds to give them an intense coffee flavor. See the tiny black specks? I used Trader Joe’s Wintry Blend, which happen to be blended with red and green peppercorns, cloves, and cinnamon.
I got lucky because the extra spices may have subtly enhanced the cookie. It’s not a requirement to the recipe, it just happened to be all I had. I’m sure any type of grounds would taste just as good.
The minute I ate a warm cookie from the oven, I knew it was the perfect embodiment of the white chocolate and peppermint mochas. These cookies will absolutely delight any coffee lover and are fabulous when served warm.
They’re perfect for the season and the green mint chips give them a nice color. If you want to make them even more festive, I suggest a sprinkle of mini red confetti quins. Enjoy!

White Chocolate Peppermint Mocha Cookies
White Chocolate Peppermint Mocha Cookies are a fluffy cookie with coffee grounds stirred right in. A delight to any coffee lover.
Ingredients
- 2 ¼ cups All-Purpose Flour
- ¼ teaspoon Salt
- ½ teaspoon Baking Soda
- 1 ½ tablespoons Coffee Grounds
- ½ cup Sugar
- ½ cup Light Brown Sugar
- 14 tablespoons Unsalted Butter, Room temperature
- 2 Eggs, Room temperature
- 2 teaspoons Pure Vanilla Extract
- 1 teaspoon Peppermint Extract
- ¾ cup Green Mint Chips
- ¾ cup White Chocolate Chips
Instructions
- Preheat the oven to 350°F. Line a sheet pan with parchment paper.
- In a large bowl, combine the flour, salt, baking soda, and coffee grounds. Stir until well combined.
- In an electric mixer, cream the butter and sugars until light and fluffy.
- Add the vanilla extract and peppermint extracts and mix.
- Add the eggs one at a time, making sure each is fully incorporated into the mix.
- Add the flour mixture and mix until just combined.
- Stir in the chocolate chips by hand.
- Use a cookie scoop to place the cookie batter on the sheet pan. Press each cookie mound just slightly with fingertips.
- Bake for 10-12 minutes. Carefully move the cookies to a cooling rac
