A few weeks ago, I made a whole batch of chocolate and vanilla cupcakes for my cousin's bridal shower. Somewhere in the rush to get them done along with a batch for the No Kid Hungry blogger bake sale, I did not leave enough for V to enjoy. Oops! So I promised him we would bake cupcakes together and he could have as many as he wanted.
I encouraged him to branch out and pick something other than vanilla cupcakes or chocolate cupcakes. He loved the suggestion of limes. The kid loves anything sour. He will happily eat a lemon wedge any time he gets a chance.
Anyways, these cupcakes turned out wonderful. I really wanted to make a coconut frosting but the little boss said no way. Instead, I made a vanilla cream cheese frosting. Well, at least he was willing to try out limes in a cupcake. Can't win them all!

Key Lime Cupcakes with Cream Cheese Frosting

Ingredients
For the cupcakes
- 1 ½ cup all purpose flour
- ¼ teaspoon salt
- 1 ¼ teaspoon baking powder
- ½ cup unsalted butter
- 1 cup sugar
- 1 egg
- 1 white
- 1 ½ teaspoon vanilla
- 2 tablespoons lime juice
- 1 tablespoon lime zest
- ¾ cup whole milk
For the frosting
- ½ cup unsalted butter
- 8 oz cream cheese
- ¼ teaspoon salt
- 2 teaspoon vanilla
- 3 cups confectioners sugar
- milk to adjust consistency if needed
Instructions
For the cupcakes
- Preheat the oven to 350°F and line a muffin tin with cupcake liners. In a small bowl whisk together the flour, salt and baking powder.
- In the bowl of an electric mixer, cream the butter and the sugar until white and fluffy. Add the egg and egg white and mix until incorporated.
- Add the vanilla, lime juice and zest and mix well. Lower the speed and alternately add the flour mixture and milk in 3 additions.
- Equally divide the mixture between the 12 cupcake liners. (Fill about halfway in each.) Bake for 15-18 minutes or until a skewer comes out clean.
For the frosting
- Beat the butter and cream cheese together until smooth. Add the salt and vanilla.
- Beat in the sugar starting with 2 ½ cups first and adding more if needed. Add a teaspoon of milk if you need looser frosting or add sugar if you need it stiff.
