This past weekend was Share Our Strength's Great American Bake Sale. Share Our Strength is a national non-profit working to end childhood hunger in America. Bake sales were held all across the country on Saturday to raise funds and awareness.
I was lucky to participate in one after being contacted by Maggy of Three Many Cooks who was organizing a blogger bake sale in New York City. I had met Maggy at the blogger cookie swap that she had helped to organize last winter. She did a fantastic job of getting together a group of talented bakers to lend a hand for a good cause.
Although I was unable to participate with helping out at the actual sale, I managed to still bake and drop off some salted caramel brownies. Another blogger sent out these cute tags to label our items.
Knowing that once V was awake I'd get nothing done and wanting to get these to the bake sale on time, I got myself up at 6 am to take some final photos and package my brownies. Two dozen sticky, gooey, chocolaty, caramel brownies individually packed and ready to go!
Here's a photo of the bake sale table. I was completely distracted with worrying that V was going to run off into the street, so I ended up with some not so great shots of the table and other items.
As you can see by the little tiny hand in the corner, he was more distracted by the gorgeous macaroon lollipops made by Lillian of Sweets by Sillianah. Those adorable burger and fries you see were made by Andrea. Super cute. Since I don't have close up shots of the other goods, I've left links to other bloggers who posted them. I was even more amazed with the power of bloggers and bake sales when I got home and scrolled through my Twitter feed. Atlanta, Los Angeles, San Francisco, Miami and I'm sure many other cities all raised well over a $1000 dollars.

Salted Caramel Walnut Brownies
Two dozen sticky, gooey, chocolaty, caramel brownies individually packed and ready to go! Get the recipe to enjoy for yourself or your next bake sale.
Ingredients
For the brownies
- 2 cups of semi sweet or bittersweet chocolate chips
- 1 cup unsalted butter
- 6 eggs
- 2 ¼ cup sugar
- 1 cup all purpose flour, sifted
- ¼ cup cocoa powder
- 1 ½ cup shelled walnuts
- ½ cup chocolate chips
For the salted caramel topping (adapted from Bianca Henry's recipe found on Food 52)
- 1 ½ cup sugar
- 1½ cup light corn syrup
- ¼ cup water
- ⅓ cup heavy cream
- 6 Tbs unsalted butter
- ⅛ teaspoon salt
- sea salt for sprinkling
- ¼ cup chocolate chips, melted.
Instructions
For the brownies
- Butter and line a 12 x 17 inch pan with parchment paper and preheat oven to 350ºF.
- Chop the walnuts and set aside. Heat the chocolate and butter in a double boiler until the butter is just melted.
- Mix the eggs and sugar until light and fluffy. Pour the chocolate and butter mixture into the egg mixture. Add the sifted flour and cocoa. Mix to just combine.
- Add three quarters of the chopped walnuts and chocolate chips and stir them in by hand. Spread the batter in the pan. Sprinkle the top with the remaining walnuts. Bake for 10-15 minutes or until a toothpick comes out clean. Let it cool in the pan.
For the salted caramel topping (adapted from Bianca Henry's recipe found on Food 52)
- In a large sauce pan combine the water, corn syrup and sugar. Cook over medium low heat stirring constantly until the sugar dissolves.
- Raise the heat to medium high and bring it to a simmer. Allow it to vigorously simmer until the sugar turns a medium amber color.(Approximately 15 minutes)
- Remove the pan from the heat and add the cream, butter, and salt. Stir slowly until blended and smooth. Carefully pour (or use a ladle like I did) over the cooled brownies.
- Sprinkle with sea salt. Drizzle the melted chocolate over the caramel in a pattern by piping or just randomly drizzle it with a spoon.

On the brownie recipe, where it says bring up to a simmer and vigorously simmer, do you mean boil?

Kathy, you want it to bubble but you don't want the heat super high either. Making caramel is delicate since it can go from being a nice amber to really dark and burnt very quickly. I adjust my gas burner from simmer to boil or back to simmer to get the right color. Caramel will continue to darken even after you take it off the heat so be sure to cool it by dipping the bottom of your pan briefly in a bowl of ice water. Hope this helps.
