Here’s an easy and fun Valentine’s Day treat for the kids. Heart shaped cookie pops- make it from scratch or make it semi-homemade!
These are not your ordinary Valentine’s Day sugar cookies. Not only are they heart shaped and covered in pretty sprinkles but they are presented on a stick! That’s right, these are cookie lollipops! And they are so easy to make! So let’s get started!
Sugar Cookie Dough
For the cookie dough you can either use your favorite sugar cookie dough recipe or try my sugar cookie recipe made in a food processor. That recipe post also includes some helpful tips on rolling, cutting and baking shaped cookies that you may want to look over before continuing.
Rolling and Cutting Out Heart Cookies
If you’re not into making your own dough, you can always buy ready made sugar cookie dough. If it comes in a roll, simply break up the dough and knead in ¼ cup flour until well blended.
Roll out the dough to ¼ inch thickness. Next chill the dough until firm, at least 30 minutes in the refrigerator. Cut out your hearts using a heart shaped cookie cutter. (The cookies in the pictures were made using a cutter that’s 2.75 inches at its widest.)
How to Put Cookies on a Stick
There's no need to layer the stick between two cutouts. You'll see why.
Lay a piece of parchment paper on baking sheet. Place your heart cutouts on the baking sheet so that there is enough room for the sticks. Gently press a stick into the dough. The dough should be soft enough to push the stick in but not so soft that it begins to lose shape when pressed.
Chill the entire cookie sheet for at least twenty minutes and then proceed with the baking instructions of your sugar cookie dough recipe. Let them cool completely before decorating.
Decorating Heart Shaped Cookies
Decorate your heart cookie pops anyway you want! Use a ready made royal icing or my easy cookie icing recipe. See how that stick gets covered with icing?!
Add sprinkles or sugar crystals if you would like. Or maybe even personalize them like this:
PRO TIP: Separate a small amount of your icing and add your desired food coloring. Using a number 2 tip and a piping bag, create outlines around all your heart cookies. After it dries go back and fill your cookies in the same or different color with a number 3 tip (if you have one). Gently shake the cookie so all the gaps are filled with the icing. Cover with sprinkles if desired and wait until they are dry to shake off the excess.
Making a Cookie Bouquet
Once the cookies are completely dry, you can cover them with the lollipop bags. Sometimes they already come with ribbon ties that you just pull close. Fit the foam into your container. (Since my cookies were heavier then my cardboard container, I filled the bottom of my container with dry beans to keep it upright.) Arrange your cookie pops into the styrofoam base and fill the container with decorative shredded paper, grass or tissue paper to cover the foam.

Materials
- sugar cookie dough
- royal icing or cookie icing
- sprinkles
- pink, purple and/or red food coloring , (preferably gel dyes)
- lollipop sticks, found in craft stores
- clear lollipop bags
- decorated container
- small piece of styofoam the size of your container
- decorative shredded paper or grass
- ribbon
Tools
- Heart shaped cookie cutter
- cookie sheets
- parchment paper
- Oven
- piping bags
- piping Tip (#2 and #3)
Instructions
- Roll out your dough on a floured surface to a ¼th inch thickness. Chill the dough until firm enough to cut.
- Cut out your heart shape cookies.
- Place your hearts on your cookie sheet and then lay the lollipop stick into each heart gently.
- Chill your cookie sheet in the refrigerator for at least twenty minutes or more. This will help the dough keep its heart shape in the oven. Preheat your oven as directed on the dough package.
- In the meantime prepare the royal icing according to your recipe. Keep the icing covered with a damp paper towel so it does not dry out.
- Bake your cookies as directed in your cookie dough recipe.
- Let your cookies cool on the pan before moving them.
- Separate a small amount of your icing and add your desired food coloring. Using a number 2 tip and a piping bag, create outlines around all your heart cookies. After it dries go back and fill your cookies in the same or different color with a number 3 tip. (If you have one, otherwise continue with a #2 tip)
- Gently shake the cookie so all the gaps are filled with the icing. Cover with sprinkles if desired and wait until they are dry to shake off the excess.
- Cover each dry cookie with the lollipop bags. Sometimes they already come with ribbon ties that you pull close. Otherwise, tie with a ribbon.

Notes
The times shown in the recipe are just general estimates. Time will vary depending on whether you use ready made icings and the icing dry time.
