These Cookies Are Cakey, Not Fudgy
A lot of mocha cookies are dense and fudgy, close to a brownie. These bake up differently. They're light, with a soft, cakey crumb.
The flavor is coffee first, from the grounds in the dough, with white chocolate and mint alongside. If you came here expecting a rich chocolate cookie, you may want to take a look at my chocolate peppermint chip cookies instead.

- Coffee grounds. Stirred right into the dry mix for real coffee flavor. They're the tiny black specks you can see in the cookies. I used Trader Joe's Wintry Blend, which is blended with peppercorns, cloves, and cinnamon, so the extra spice may have added a little something. It's not required. Any grounds work.
- Green mint chips. They bring the mint flavor and give the cookies their green color.
- White chocolate chips. The white chocolate side of the white chocolate mocha.
- Peppermint extract. Adds peppermint flavor to go with the mint chips.

How to Make White Chocolate Peppermint Mocha Cookies
Start by whisking the flour, salt, baking soda, and coffee grounds together. Putting the grounds in with the dry ingredients spreads them evenly through the dough, so you get coffee flavor and those little specks in every cookie.
Cream the butter and both sugars until light and fluffy. This step adds air and sets up the cakey texture. Mix in the vanilla and peppermint extracts, then add the eggs one at a time so each one works in fully before the next.
Add the dry mix and stir until just combined. Stop as soon as the flour disappears. Overmixing works the flour too much and firms up the cookies. Fold in the white chocolate chips and mint chips by hand.
Scoop about 2 tablespoons per cookie and press each mound slightly. Bake at 350°F for 10 to 12 minutes, then move them to a cooling rack. Once cooled, sprinkle red confetti quins on top for a festive look.

White chocolate peppermint mocha cookies are a fluffy, cakey cookie with coffee grounds stirred right in.
Ingredients
- 2 ¼ cups All-Purpose Flour
- ¼ teaspoon Salt
- ½ teaspoon Baking Soda
- 1 ½ tablespoons Coffee Grounds
- ½ cup Sugar
- ½ cup Light Brown Sugar
- 14 tablespoons Unsalted Butter, Room temperature
- 2 Eggs, Room temperature
- 2 teaspoons Pure Vanilla Extract
- 1 teaspoon Peppermint Extract
- ¾ cup Green Mint Chips
- ¾ cup White Chocolate Chips
Instructions
- Preheat the oven to 350°F. Line a sheet pan with parchment paper.
- In a large bowl, combine the flour, salt, baking soda, and coffee grounds. Stir until well combined.
- In an electric mixer, cream the butter and sugars until light and fluffy.
- Add the vanilla and peppermint extracts and mix.
- Add the eggs one at a time, making sure each is fully incorporated into the mix.
- Add the flour mixture and mix until just combined.
- Stir in the white chocolate chips and peppermint chips by hand.
- Use a cookie scoop to place the cookie dough on the sheet pan. Press each cookie mound just slightly with fingertips.
- Bake for 10-12 minutes. Carefully move the cookies to a cooling rac
