What Kind of Boxed Mix Should I Use?
This is a personal preference but my favorite box mix is Ghirardelli Dark Chocolate brownie mix. I find these brownies to be the richest and deepest chocolate flavor and comes closest to my homemade classic brownie recipe. They are fudgy without being too chewy and bake up with shiny crinkly top we all love.
For those that like sweeter chocolate and still want that same perfect fudgy texture, I would recommend Ghirardelli Double Chocolate brownie mix. Either of these boxed mixes would hold up well in any of the above creative brownie recipes where it can be substituted.
What Type of Pan Should I Bake Brownies In?
My go to pan is a 9x13 inch (2 inch deep) dark steel non-stick cake pan. For smaller batches I have a similar pan that is 8x8 inches. Although it is non-stick, I always line it with parchment paper.
Metal pans generally bake more evenly. You can use a glass or ceramic pan but they take longer to heat and the edges will often cook faster than the middle.

How Do You Store Brownies?
Brownies can remain at room temperature in an airtight container for 3-5 days. If they are frosted with buttercream or ganache, I would store them in the refrigerator. They freeze beautifully too. Just put them in an airtight container in the freezer and store for up to two months.
